Dreaming of your next Caribbean escape? Lounging on the beach, listening to the waves of the crystal blue ocean while sipping your favorite Caribbean cocktail. While we are only able to dream for the time being, you can turn your backyard into an all inclusive resort with these easy recipes! These are some of my all time favorites and so easy to make! Enjoy them with or without alcohol and bring a bit of the Islands home to you. Cheers!
Classic Mojito
This traditional Cuban cocktail is perfect when relaxing on the beach or for now in Puerto Backyardia!
Ingredients
2 oz. White Rum
½ fresh lime
12 fresh mint leaves
2 tsp. sugar (less/more to taste)
Splash of soda water
Crushed ice
Sprig of fresh mint (garnish)
Directions
- Put the four lime wedges into a glass, then add the sugar and mint leaves and muddle (squish everything together) to release the lime juice
- Half fill the glass with crushed ice and pour in the Bacardi Carta Blanca. Stir the mix together until the sugar dissolves
- Top up with crushed ice, a splash of the soda water and garnish it with a sprig of mint
*** A unique twist on this classic......Substitute the white rum for your favorite coconut rum, and use cranberry juice instead of soda water.I had this version on a trip to Jamaica once and it’s absolutely delish!
Bob Marley
The name says it all. Don’t worry, about a thing…..Irie Mon!
Ingredients
2 oz. white rum
½ oz. Blue Curacao
4 oz. strawberry daiquiri mix
3 oz. chopped mango
1 ½ oz. sweet and sour mix
Directions
- First, start by making the red portion of the drink by combining 1 oz. light rum, 4 oz. strawberry daiquiri mix and 1 cup of ice in a blender. Mix ingredients and pour into the bottom of the glass.
- Next you will need to combine 1 oz. of rum, 3 oz. of chopped mango, 1 ½ oz. of sweet and sour mix and one cup of ice in a blender. Mix ingredients together to create the yellow portion of the drink. Pour only half of the mixture into the glass.
- Take the remaining drink mixture and blend with ½ oz. of blue curacao to create the green portion of the drink. Pour into the glass.
Pina Colada
The signature drink of Puerto Rico…… who couldn’t use a little “Escape” right now!
Ingredients
1 ½ cup ice
½ cup diced pineapple, frozen
2 oz. pineapple juice
2 oz. coconut cream
1½ oz. white rum
1 oz. dark rum
Fresh pineapple slices (garnish)
Directions
- Put the ice, frozen pineapple, juice, coconut cream, and the white and dark rums into a blender.
- Blend until smooth and frosty.
- Pour the drink into 2 glasses and garnish the rim with pineapple slices.
Bahama Mama
This classic cocktail from Bahamas is now a favorite across the Caribbean. Rumor has it this drink became popular during the prohibition when the Bahamas were used as a rum smuggling base.Try this recipe in the blender for an extra frosty treat!
Ingredients
1 oz. White Rum
1 oz. Coconut Rum
½ oz. Dark Rum
2 oz. Orange Juice
2 oz. Pineapple Juice
Directions
- Fill a hurricane glass with ice and pour in white rum, coconut rum, dark rum, orange juice, and pineapple juice.
- Add a splash of grenadine.
- Garnish with an orange slice and a cherry.
Frozen Margarita
This favorite from Mexico has been the subject of many a good story and song…..its 5 o’clock somewhere right?
Ingredients
1 oz. Tequila
½ oz. Triple Sec Liqueur
½ oz. lime juice
Salt
1 cup Ice
Directions
- Put ice and all of the ingredients into a blender and blend for approx. 20 seconds.
- Run a lime wedge around the outside of the rim of your glass before rolling the rim in salt.
- Pour mixture into glass and enjoy!
- Try substituting the ice for frozen strawberries. A delicious twist on the classic Margarita!
Waborita
Straight from Sammy Hagar’s bar, The Cabo Wabo Cantina in Cabo San Lucas, Mexico. One of my all-time favorites!But be careful, this one sneaks up on you!
Ingredients
1 oz. Cabo WaboTequila
½ oz. Damiana liqueur (if you cannot get this, just use more orange liqueur)
1⁄2 oz. orange liqueur
1⁄2 oz. ounce fresh squeezed lime juice
splash Blue Curacao
ice
Lime peel (garnish)
Directions
- Pour tequila, Damiana, orange liqueur, and lime juice in a shaker and fill with ice (Sammy officially says "Mucho Ice").
- Shake it up until ice cold
- Pour into a chilled, salt rimmed martini glass.
- Drop in lime peel.
- Finish with a splash of Blue Curacao.
*Tip – slowly pour the Blue Curacao down the side of the glass to get the layered look
** If you can’t find Cabo Wabo Tequila where you live, that is very unfortunate, but you can substitute it with another tequila if need be!
